And I overcooked the broccoli…The dish was still delicious (no complaints from parties, but knowing how he likes his pasta it’s no wonder) and I’ll know how to cook it better next time.
As I’ve said before, broccoli and me are just getting to know each other and this was a very successful date.
INGREDIENTS FOR TWO SERVINGS:
1 chicken breasts, cut into bite-sized pieces
1 head of broccoli, crowns only, cut into bite-sized pieces
FOR THE MARINADE:
1 tbsp sesame oil
1 tbsp water
1/2 tsp baking soda
1 tbsp brown sugar
1 tbsp cornstarch
1 tbsp soy sauce
FOR THE SAUCE:
1/4 cup of half soy sauce & half water
2 tbsp brown sugar
3 cloves garlic, minced
2 tbsp flour
1 tablespoon apple vinegar (or rice vinegar)
1 tbsp olive oil
2 tbsp water
Combine all the ingredients of the marinade, cover the chicken and set aside.
Steam/ boil the broccoli for 3-4 minutes, remove from heat and set on ice.
Combine the ingredients of the sauce.
Sauté the chicken on medium-high heat together with half the quantity of sauce.
Add water from time to time if the sauce gets too thick.
When the chicken is cooked, add the rest of the sauce and cook for another minute (or until the sauce is as thick as you want it to be).
Add the broccoli into the pan and remove from heat (instead of removing from heat I let it cook together with the chicken for another minute… it was enough to make the broccoli a little mushy).
Cover it with a lid and let it rest while you set the table.
Serve with steamed brown rice.
