Nom Nom and ready in less than 30 minutes…of which 15 minutes were spent “degustating” (is this even a word?) wine.
‘Cause you know…I too cook with wine and sometimes I even use it in my recipes.
1 portabella mushroom
2 tbsp goat cheese
about 2 cups spinach
1/3 yellow onion
1 tbsp sundried tomatoes
2 garlic cloves
1 tbsp olive oil
pink salt & fresh ground pepper
Chop the onion and the garlic and sauté them in olive oil for 3- 4 minutes.
Add the spinach and season with pink salt salt and pepper.
Sauté the spinach until soft.
Transfer the spinach in a bowl and mix with the goat cheese, the sundried tomatoes and some basil.
Fill the portabella mushroom with the spinach mixture and roast it at 380F until soft (about 10 minutes).
Serve on a bed of greens seasoned with some balsamic vinegar.
