I had a lot of things to do yesterday and I ended up having a very late lunch.
Needless to say I was starving and this is the only photo I took before devouring everything I had in my plate.
It was really good!!
whole wheat organic spaghetti
1 summer squash
1 handful arugula
1 handful kale
2 garlic cloves
pink salt & pepper
chili flakes (optional)
extra virgin olive oil
While the spaghetti are boiling, cut the squash and the zucchini in small cubes and saute them in a tbs of olive oil.
Add 1 crushed garlic clove, salt & pepper & chili flakes (optional) to the pan and let everything fry for another 4- 5 minutes.
Put the greens in a food processor, some olive oil, the second garlic clove (mine were really big, you could use like 2 or even 3) and some water and puree them.
Put the pesto over the veggies and remove from heat.
Strain the spaghetti and cover with the veggies and the pesto.
Serve with shredded parmesan.
