I can’t get enough of mushrooms, so I made a soup with three different kinds of them.
I kept is simple and healthy, but it was pretty hard not to add some brie cheese or camembert in there.
1 pack of brown champignon mushrooms
2 cups oyster mushrooms
1 bunch of maitake mushrooms
1 sweet onion
1 small potato
2 tbs olive oil
pink salt & black pepper
Peel the onion and cut it in big pieces.
Heat a large sauce pan, add the olive oil and the onion and 1/2 cup warm water.
Cook the onion for 3 – 4 minutes and add the potato peeled and cut into small cubes.
Let cook for 5 minutes and add all the mushrooms (after washing them carefully).
Season with salt and pepper and add 2 – 3 cups of warm water.
Cook on slow heat until all veggies tender.
Puree in a food processor and serve with sour cream and sticky cheese. 🙂
