This is comfort food for me because my mother used to make this dish for us in the winter time.
We call it “tocăniță de pui” or “tocană de pui”. 🙂
She also made the best pickles in the whole world and the best red cabbage salad.
Ingredients:
5 chicken drumsticks (or more)
2 russet potatoes
6 small peppers or a big one
1 sweet onion
parsley ( I used dried)
pink salt & pepper
1 bay leaf
2 tbs tomato paste
2 tbs olive oil
chicken stock or warm water
First you need to fry the chicken drumsticks a little bit in olive oil.
Then remove the chicken and start cooking the chopped onion in the same pan.
When onion is golden and the chopped pepper.
Add a 1/3 cup water and let cook for 2 minutes.
Peel the potatoes and cut them in small cubes and add them to the pan.
Season everything with salt & pepper, put also the bay leaf in the pan and cover with chicken stock or warm water.
Let cook on low heat for 10 -15 minutes (until the potatoes are almost done).
Mix the tomato paste with some warm water and add to the stew.
Then add the chicken and mix well.
Now remove it from stove and put it in the oven for 25 – 30 minutes (at 370 F).
Make sure you put enough water/ stock into the stew, it shouldn’t be too dry.
Serve with fresh or dried parsley.
