You need:
1 1/2 pound wild salmon
2 scallions
2 garlic cloves crushed
2 – 3 tbs light soy sauce
salt & pepper
2 tbs olive oil
1 egg
1 loaf of whole wheat bread crumbled
(or Panko crumbs)
1 tbs butter
1 – 2 tbs canola oil
Remove the skin from your fish and put the meat together with the rest of the ingredients (except the scallions and the bread crumbs) in a food processor.
Puree for a few seconds.
Transfer the fish paste in a bowl and add the chopped scallions and the bread crumbs.
Mix well.
I divided the paste in 3 balls and the burgers were pretty big.
Use the balls to make salmon patties (make sure your hands are wet it’s easier that way)
Heat a skillet on medium high heat. Add the canola oil and then the salmon burgers.
Fry them on both sides.
Remove from pan and place them on a cookie sheet.
Glaze them with butter and roast them for 10 minutes at 400 F.
Enjoy with a lemon mayo or in salads or with a side dish or … as burgers!
