Christmas is just around the corner, and Santa is probably rubbing his belly thinking of all the cookies he’ll enjoy this year. 🙂
To be honest, I was thinking more about my own belly when I came up with this recipe.
And I was extremely satisfied.
It was one of those “why didn’t I think of this before” moments.
You need:
50 ml whole milk
50 ml heavy whipping cream
1/4 cup evaporated milk
1/2 cup sugar powder
1 tbs vanilla extract
2 tbs baking powder
pinch pink salt
1 egg
5 tbs melted butter
1/3 cup corn starch
1 3/4 cup white flour
Mix the evaporated milk with the sugar powder, vanilla extract and salt.
Add the egg into the mixture, then the milk and the whipping cream.
Mix all together.
Add the melted butter and continue mixing.
Mix the flour with the corn starch and sift it over the dough.
Mix well using the mixer and then your own hands.
This is how the final dough looks like.
Let it rest in the fridge of an hour.
Divide the dough in 3 smaller balls, cover you working space with flour and roll the dough in thin sheets (mine were around 3 mm thick).
Give the biscuits whatever shape you want(I made stars and moons …and some ducks).
Bake at 380 F for 25-30 minutes (until golden).
If you want them crunchy you should bake them a little longer (golden brown).
They’re great with preserve or nutella or just plain next to a glass of milk or a cup of tea.
