So you must believe when I say that this is really good… ’cause it is!
1 pack of big northern beans
2 sweet onions
pink salt & black pepper
1 can of tomato puree
4 tbs sunflower oil (or canola oil)
3 garlic cloves
Soak the beans in cold water the night before you want to make this dish.
Remove the water in which the beans stayed during the night and start boiling them in a new, clean water.
When the water reachs boiling point, remove it and put some new cold water over the beans.
Boil the water again and remove it…do this procedure for 3 times (helps if you want to avoid having gas…after eating the beans hummus, if you know what I mean).
Boil the beans on low heat for about 2 hours (until smooth and completely hidrated).
Remove the bean shells and all the water.
Puree the beans in a food processor.
Add the garlic, after pressing it in a garlic press, and 2 tbs of sunflower oil.
Puree again in the food processor.
Cut the onion in thin slices and sautè them in the remaining oil (you can add as much oil as you like).
When the oniom is smooth and golden add the can of tomato puree.
Salt and pepper everything and let cook for 3-4 minutes.
Transfer the bean hummus from the food processor in a large bowl and cover it with the onion- tomato sauce.
Serve on freshly baked bread or toast.
