4 -5 slices brie
6 slices prosciutto
2 green onions
1 tbs butter
Cut the green onion leaves in small pieces and rip the prosiutto slices in 4 pieces each.
Melt the butter in a frying pan and stir the onion and the prosciutto in the sizzling butter a couple of times (no more than a minute).
Add the beaten eggs and scramble everything.
Put the brie slices on a plate and arange the hot omelette over it (the brie will melt soon enough).
Serve with pepper, fresh parsley and cherry tomatoes.
