Plantain Fritters & Fake Chocolate Mousse




Now that I post this I wonder why didn’t I try to make this with pumpkin… maybe next time.

Anyhow, initially I was craving fried plantains, then I decided I didn’t want all that grease

(more like I shouldn’t want it :D) so here we are with plantain fritters.


You need:


1 1/2 plantains

2 eggs

vanilla extract

lemon zest

2 tbs brown sugar

1 cup milk

1 1/2 cup flour

1 tbs baking powder

pinch of pink salt

1 tbs butter melted




Peel the plantains and cut them diagonally.




Wisk the eggs with the milk, sugar, vanilla extract, melted butter, pinch of salt and lemon zest.

Add the flour and the baking powder and mix well.

The batter should have the consistancy of pancake batter.




Cover the plantain slices with the batter, put a little pieces of butter in a heated frying pan and start making the fritters.

(keep the heat at medium-low… about 5)




Cook them on both sides (just like pancakes).



I served them with honey and fake chocolate mousse.

What is that?


1 ripe banana

1 ripe avocado

2 tbs cocoa

1 tbs honey


Put them all in a food processor and puree them until smooth. 🙂
