Long story short, the cake is really good and it has just a hint of blue cheese in it.
(I bought some the other day and now I feel like using it in everything I cook/bake.)
1/2 cup golden raisins
1/2 cup almonds sliced
1/3 cup milk
1/4 cup sunflower oil
1/2 tbs vanilla extract
1/2 tbs rum
pinch of pink salt
1 tbs baking powder
a drop of almond emulsion
1 1/2 cup whole wheat flour
1/2 brown sugar
few pieces of blue cheese (only if you’re into strange cakes :D)

Crack the eggs and separate the whites from the yolks.
Beat the whites stiff with a mixer.
Add the sugar over the yolks and mix until creamy (like in the photo).
Add the milk and oil and continue mixing.
Add the vanilla extract, almond emulsion and the pinch of salt.
Add the flour combined with the baking powder in small quantities while mixing.
Then start adding the beaten egg whites in small quantities and mix carefully with a wood paddle.
(Try to mix in one direction, starting from the bottom of the bowl towards the top of the dough.)
Put the raisings with the rum in a cup and cover it with warm water.
Peel the apples and cut them into thin slices.
Add the apples and the almonds to the cake. Mix.
Drain the raisins and add them to the cake. Mix.
Add the cheese and mix.
Coat a cake pan with butter and put the dough in it.
Bake for 30 minutes at 385F (try if baked with a toothpick).
